I ended up taking it back to my mechanic on a hot day and they were able to re-produce the issue. Ended up being the fuel pump. They connected a pressure sensor to it and you could see the gauge fluctuating quite a bit when the issue was occurring. One new fuel pump and it's all good. Today was a warm day in Melbourne and I was able to drive for an hour without issue!
