banks make money (a lot) on people not knowing about (and correctly utilizing) "line of credit" and/or "offset account" home loans.

Yup. I'll essentially be closing all my other accounts. Salary will go into my offset account, I'll buy everything on my credit card, pay that off each pay day and my savings will just sit in my offset account. The saving I get from not paying interest on the money in the offset is always going to be greater than the interest I'd earn from having it in a savings account, especially given I'd lose nearly half the interest I'd earn to tax...
