Glass splash backs look awesome but the price the builder would charge for that would give you a heart attack, so we were told anyway. If they charge like they do for bathroom tiling they aren't far off. $1800 for a small bare walls toilet space that we already bought the tiles for ourselves... About 6 weeks to go if we are lucky! Wouldn't bother me not having anything up there. Would likely only end up holding crap that never gets used. I've certainly found that the more storage space you have the more crap accumulates. Got plenty of pantry and lower cupboards already for perpetually unused champagne and wine glasses (neither of us drink it) etc. Would rather a plant up there or something cool to look at!
