Temp Gauge After Thermo Change Still Not What I Expected

Chucked a new 82c thermo in the ute a few weeks ago after I noticed that the original (or what I think was the original) had a hole in it.

I was a little unsure what the temps should be but they seemed low as the needle only got just under 1 quarter all the time. After the swap it runs at a needles width over the quarter & seems to sit more consistent as well as quicker.

Only problem is that the fuel use is a little higher than I was expecting (13-14 per 100k, yeah it's still pretty good but still seems just a tad thirsty) & then last time I put the OBD datalogger in the fuse box & took it for a drive I saw this on the attached image

I'm not really sure that the sensor should see such a dramatic flux of temp like that. Am I correct in thinking I have either an earthing issue, a bad connection or a fault somewhere for it to do that? I'm thinking if that's the case, the temp could be rapidly fluctuating & causing the higher fuel use than I was expecting.
