My FG turbo sits on half on the temp gauge aswell. Do your fans cycle in and out? If they do then the switch is working. If they don't, then check the resistance across the switch. If it changes as the car gets warmer then you can assume that the switch is working. Also Check the fan relay by checking you don't have continuity across the 87 to 30 terminal. For your thermostat, pull it out and put it in a pot on the stove with a thermometer and check that it starts to open around the 65deg Celsius mark and I think it should be fully open at 80deg Celsius. Or a simple check is to buy yourself a $60 infra red thermometer and check the temperature of the thermostat housing. Old thermostat was cactus and wouldn't open when I popped it in a glass of boiling hot water from the kettle. I assume your fans are running at full speed (otherwise you wouldn't be able to hear them while doing 100km/h)...that definitely isn't normal.
