I'm all for sifting if your flour has been sitting in the pantry for a while.. However if you're like me and turn it over in large quantities and know how fresh it is just stirring your ingredients dry before adding moisture works as well.Over or under mixing a cake will cause it to be denser and chewier..I actually don't think I mix many cakes more then about 3-4 minutes (max)..Those are nice looking cakes though fluff..
