Never sifted flower in my life..

How's that work out for ya?

Try soft flour over plain for cakes (alternately 7 parts plain to 1 part corn).. And good job on not using self raising.. It's sh*t.

I've always been told the sifting is important....bullshoite about air hanging off the flour.

And yes baking powder is activated by air so pre bought raising is usless.

Other thing is moisture...bad for cakes and the like. Meringues hate moisture..never use wooden spoons with it

Is it just me or did two people just completely miss my 'Flower' joke...

Light and 'fluffy' cakes comes from the mixing more then sifted ingredients.. I'm all for sifting if your flour has been sitting in the pantry for a while.. However if you're like me and turn it over in large quantities and know how fresh it is just stirring your ingredients dry before adding moisture works as well.

Over or under mixing a cake will cause it to be denser and chewier..

I actually don't think I mix many cakes more then about 3-4 minutes (max)..

Those are nice looking cakes though fluff.. Did you make the flowers?
