im pretty sure for a standard car (xr6t) ford say about 1.1mm but tuned everyone as far as I know runs about .8mm

if I where you id try .8mm closing it up a bit isnt going to hurt your engine

BTW VCT Infinite over 60 Deg - standard on BA Mk 1 XR6T, could this be the issue?

sorry mate but I really dont know enough about vct to say yes or no im sure somebody who knows will come along soon enough

Make sure the cam angle sensors are plugged in correctly and the wires are in good order. They are located at the very rear of the head right near the firewall. Especially the one on the exhaust side as it deteriorates because of heat. Unplug one at a time and go for a drive. It there's no difference, there's ya problem!

from experience this to me sounds like a stuffed wastegate actuator.

after witnessing higher than tolerated boost levels the pcm will switch 3 cylinders off

to bring the boost level down, which is the 'breaking down' you feel.

it continues for 20-30 seconds or until a free rev is undertook.
