If they say it's going to be any longer than around 20minutes, it means they're busy, and any number of things can hold up the process.

Any time after 20-25min is always a guess as this is around the baseline for a non-busy scenario. Whenever I order a pizza and they say 30min to wait, I get there about 30min after ordering with the expectation that it might take another 10-15min of waiting for the pizza to end up boxed and ready to go, due to the amount of unpredictable things that can hold up the process :)

Maybe I'm a pessimist though...

If they don't give a time, hundreds of customers will ask how long... they give out a time as a guideline to keep customers from spending forever on each phone call explaining the nuances on what can cause the time to fluctuate or not be accurate :)

That's the thing, the production line part is easy to estimate, it's everything that stops that production at any possible interval that causes delays :)
