Just a quiet day senna or quiet period? (Do you have busy and slow periods?)

Haha gotta love cooking shows Tab.. I was thinking it'd be good for hospitality but then Coles started stocking Duck and Pork Belly on a regular basis and everyone murders it in their own special way at home..

On that topic one of my mates tried to cook rabbit the other night cause he saw it one a show.. *blargh*

Yes, everyone is a "foodie" now...

I did enjoy MasterChef though - probably the only reality show that doesn't centre around controversy...

The days are a bit weird at the moment, super busy up to 10am and then quiet till 12, then busy until 1:30 and quiet again. Its always like that but lately the difference has been really stark. Still turning over the dollars, just not as busy throughout the day.

I hate the fact they get called a chef because they follow a recipie. Big deal.

Lets see how they cope with doing eighty a'lacarte with just a 2nd chef, a third year and a dishy. They would have docket face before they got the first meal out. And it would look and taste like dog food by half way through service.

12 hour days are the norm and your business becomes your life. fark that, first half of my life was that game. Old man was prez of the city of syd rsl since christ was playing break away for randwick.

it's a young mans game and a great way to see the world. Ottherwise never invest in a friends restaurant

...and then the exhaust drops out, service fck up all your orders and the dishy cracks the sh*ts and storms out. You finally walk out of the kitchen 20 hours after walking in and get paid the minimum wage...that's "chef"ing.

But yeah it's all a bit of a farce. It's probably 10% skill and 90% being able to work under the sh*ttiest conditions imaginable. Highly recommend it. :spit:
