As soon as you put the boot in for an extended time the water temps will rise a lot higher than the thermostat can control negating the lower value, at this point its up to the rest of the cooling system to keep heat under control.If you are drag racing, I could see a lower thermostat being a benefit, the nature of drag racing with short burst and the engine spending most of the time off, allowing the engine to cool between runs. But for circuit racing and for the street where the engine coolant will be well above the thermostat opening temp, there would be minimal benefit.
