The back way from Berri Springs is dirt.Go in the clockwise direction, check out the termite mounds and Florence Falls on the way to your stop.I'd recommend heading down the Arnhem Hwy to the Adelaide River and going on one of the croc tours.Check out the Mindal Beach markets and Stokes Hill Wharf in the evening if you have time. Definitely thinking of doing the Lichfield falls cos am told it's the crazy season there right now where humidity is really high just before the monsoon rains start and a swim sounds like an appealing way to keep cool - just not sure if it is safe to swim if the salties are in the area? You won't need a day for the croc cruise. It's about an hour from Darwin and goes for about an hour. The scenery along the roads to and through Kakadu is pretty boring.
