Probably dark more than anything.

I did cook it to 66c though cos it's quite fresh. That's somewhere between medium and medium well.

now I'm hungry for steak... cooked medium-rare, though... anything beyond "medium" is sacrilege

This piece would have been fine at medium but I was worried it'd be a bit rich.

 

It's got a different flavour than the grain fed stuff that I'm used to.

is it grass-fed? healthier, but less fatty flavours.

I love a grain-fed steak, they make extremely tasty steaks.
