I heated the tomato in the pressure cooker with the lid off and added the mince when it was done. I deglazed the pan with the coconut milk and when it started to boil, added it to the pressure cooker for a total of 30 minutes under pressure. When I let the pressure out it smelt like fart which my kids quickly confirmed. In the pot it smelt like fish. They named it fart stew. I used a large serving spoon with holes and ended up with about 1 cup of liquid remaining in the pot. I ate the whole thing in one sitting except the last half a cup or so as the baby decided that she liked it too. It taste great and nothing like a typical kangaroo dish. Definitely worth a crack. It was pretty soupy cos the pressure cooker holds most of the moisture in. That's why I used the serving spoon with holes. It was more chewy than beef mince but it wasn't dry. I was worried it was going to be but it turned out ok.
